The dough used in bread making is fermented by Saccharomyces cerevisiae mainly (Baker's Yeast). Fermentation of glucose mainly forms ethyl alcohol and carbon-dioxide which is responsible foe leavening of dough. When leavened dought is baked, both carbon-dioxide and ethyl alcohol evaporate making the bread porous and soft.
