If a drop of water falls on a very hot irion, it takes long time to evaporate. Explain why?

When a drop of water falls on a very hot irion, it gets insulated from the hot iron due to a thin layer of water vapour which is bad conductor of heat. It takes quite long to evaporate as heat is conducted from hot iron to the drop through the insulating layer of water vapour slowly.
