How does the bread become spongy ? OR How is bread produced ?

(i) Different types of breads are produced from flour of cereal .
(ii) Dough for bread is formed by mixing of baker's yeast - Saccharomyces cerevisiae, water , salt and other necessary materials with flour.
(iii) Due to fermentation of carbohydrates by yeast , sugar is converted into carbon - dioxide (`CO_(2))` and ethanol (`C_(2)H_(5)OH`).
(iv) Dough rises up due to `CO_(2)` and the bread becomes spongy .
