When dehydrated fruits and vegetables are placed in water, they slowly swell and return to original form. Why? Would a temperature increase accelerate the process? Explain.

Text Solution

Verified by Experts

The cell walls of the fruits and vegetables have semi-permeable membrane. When they have dried, concentration inside is higher. On placing in water, water enters into the cells, i.e., osmosis takes place. Hence, they swell and return to the original form. The process will be accelerated with increases of temperature because osmosis becomes faster with increase of temperature.
