Coagulation of egg white on boiling is an example of denaturation of protein. Explain it in terms of structural changes.

When white of an egg is boiled , the soluble globular protein albumin present in it is converted into insoluble fibrous protein. During this denaturation (i) biological activity is lost and (ii), secondary and tertiary structures of albumin protein are destroyed while the primary structure (representing the sequence of `alpha`-amino acids) remains intact.
