Indicate the nature of changes that occur when egg protein is boiled.

Egg contains globuler proteins. On boiling such proteins undergoes coagulation irreversibly to form fibrous proteins. In other words, proteins lose their biological activity and thus get denatured. During denaturation, the secondary and tertiary structures of proteins are destroyed without affecting the primary structure.
