On hydrolysis, surcose (dextrorotatory) gives a `1 :1` mixture of glucose (dextrorotatory, `+52.5^(@)`) and fructose (laevorotatory, `-92^(@)`). Since laevorotation of fructose is greater than the dextrorotation of glucose, the mixture is laevorotatory
