1) Rancidity : Oxidation reactions in food material that were left for a long period are responsible for spoiling of food. This process is called Rancidity.
2) Effects of rancidity : If food is oxidized rancidity takes place causes undesirable odour, flavour and taste.

4) Rancidity can be prevented by filling of nitrogen to cut the contact of oxygen to the food materials. For example : `N_(2)` fills in lays, kurkure chips packets etc.
