Rancidity : - Oxidation reaction in food materials that were left for a long time are responsible for spoiling of food called rancidity.
2) When fats/oils are oxidized they become rancid. Their smell and taste change.
3) Rancidity is an oxidation reaction.
4) The spoilage of food can be prevented by adding preservatives like Vitamin C and Vitamin E.
5) Usually substances which prevent oxidation (Antioxidants) are added to food containing fats and oil.
6) Keeping food in air tight containers helps to slow down the oxidation reaction.
7) Some chips packs (potato chips) filled with Nitrogen gas to prevent oxidizing.
