A milkman adds a very small amount of baking soda to fresh milk.
Why does he shift the pH of the fresh milk from 6 to slightly alkaline

Adding a very small amount of baking soda to fresh milk, increases its thickness and also makes it alkaline. It neutralise the lactic acid produced in the milk by the action of bacteria. By doing like this milk takes more time to set as curd
