Why does betacyanin pigment come out of beet root when warmed, but carotene from boiled carrot does not ?

Betacyanin is a water soluble pigment present in the cell sap of beet root. When warmed betacyanin pigment comes out of beet root because warming cause damage of the cell membrane. On the other hand, carotene is a water insoluble pigment present in plastids, so, it does not come out even on boiling.
