Why is the bottom of cooking vessel made of steel, coated with copper?

Thermal conductivity of steel is `50Wm^(-1)K^(-1)` whereas it is `385Wm^(-1)K^(-1)` for copper. Copper promotes uniform distribution of heat to the bottom of the vessel.
