The colloidal solution of two immiscible liquids in which one of the liquids acts as a dispersed phase and the other as dispersion medium is called emulsion. Milk is an example of emulsion in which fat globules are dispersed in water. Emuldion are of two types i.e., O/W and W/O type emulsion, identified by dilution test, conductivity test and dye test.
