In the polymeric structure of cellulose, D-glucose units are linked by `beta`-glycosidic linkages between `C_(1)` of one glucose unit and `C_(4)` of the other unit. The enzyme celolulase present in the stomach of both cattles and sheeps breaks cellulose into D-glucose and it is easily digested. But it not present in the human body with the result that cellulose does not break into D-glucose in human body and cannot act as food human beings.
