A white powder is added while baking breads and cakes to make them foft and fluffy. What is the name of the powder ? What are the main ingredients in it ? What are the functions of each ingredient ?

White powder is known as baking powder. Its ingredients are baking soda `(NaHCO_(3))` and tartaric acid `(C_(4)H_(6)O_(6)),` Baking soda releases `CO_(2)` gas upn heating. The bubbles of the gas evolved make the cake soft and fluffy.

Sodium carbonate formed in the reaction is likely to impart bitter taste to the cake. Tartaric acid reacts with it and thus, neutralises the effect of bitter taste.
