Why do HCl, `HNO_(3)`, etc., show acidic characters in aqueous solutions while solutions of compounds like alcohol and glucose do not show acidic character?

Both HCl and `HNO_(3)` ionise in water to releases `H^(+)` ions or `H_(3)O^(+)` ions which make the solution acidic. On the other hand, alcohol and glucose donot ionise in water. They do not therefore, show any acidic character.
