(a) the chief proteins of milk are : (i) Casinogen (ii)Lactalbumin and (iii) Lactglobulin. (b) Milk is coagulated by Chymotrypsin,Pepsin,Trpsin. (c) product of milk coagulation are as follow : Casinogen `overset("chymotrypsin")underset(Ca^(++)) to` calcium caseinate`overset("pepsin")to` peptone`overset("trypsin")to` polypeptide`overset("Erepsin")to` Amino acids.
Milk is not considerd as balnced food becouse it contain less namount of iron, copper and vitamin c.
