Iodine stimulates the thyroid gland to produce thyroxin hormone. It regulates carbonydrate, fat and protein metabolism in our body. Deficiency of this hormone results in the enlargement of the thyroid gland. This can lead to goitre, a disease characterized by swollen neck.
