The molecular formula of three fatty acids A, B and C present in oil or fat is `C_14 H_29COOH, C_15H_29COOH` and `C_16H_29COOH` Which of these is derived from i) Alkane ii) Alkene and iii) Alkyne? Which of them becomes rancid earlier? How can we increase its shelf life?

Text Solution

Verified by Experts

Derived from
i) Alkane - `C_2H_29COOH`
ii) Alkene - `C_15H_29COOH`
iii) Alkyne - `C_16H_29COOH `
`C_16H_29COOH ` is unsaturated undergoes rancidity earlier. By hydrogenation we can increase shelf life.
