Explain the composition of triglyceride.

A triglyceride is formed of one molecule of glycerol and three molecules of similar or different fatty acids . One fatty acid is attached to each of three -OH groups of glycerol by ester bond formed between hydroxyl group of glycerol and carboxyl group of the fatty acid by dehydration synthesis . Triglycerides may be pure e.g. tripalmitin and tristearin, or mixed e.g. palmito-oleio-stearin.
