When dehydrated fruits and vegetables are placed in water, they slowly swell and return to original form. Why? Would a temperature increase accelerate the process? Explain.

Text Solution

Verified by Experts

The cell walls of fruits and vegetables are semipermeable. The liquid inside the cells in the dried fruits and vegetables is more concentrated. When those dried fruits and vegetables are placed in water, water enters the fruits and vegetables due to osmosis and they well and return to their original form. Since the increase in temperature increases the osmotic pressure `(pi prop T)`, hence the process gets accelerated by increase in temperature.
