The name of the white powder is baking powder. It consists of Sodium hydrogen carbonate and tartaric acid.
Sodium hydrogen carbonate `(NaHCO_(3))` give carbon dioxide `(CO_(2))` which makes cakes soft and fluffy. Tartaric acid neutralize the bitterness due to the formation of sodium carbonate `(Na_(2)(O_(2)))`
