(b) How can baking soda be converted into baking powder ?

Text Solution

Verified by Experts

(a) Yes, it affects the taste of the cake. It makes the ckae taste bitter. This is because of the sodium carbonate that is formed as a product of heating baking soda during the process of baking.
`2NaHCO_(3) overset("heat")rarr Na_(2)CO_(3) + H_(2)O + CO_(2)`
(b) Addition of a mild edible acid (tartaric acid) to baking soda makes it baking powder.
(c ) Tartaric acid neutralises the `Na_(2)CO_(3)` and forms sodium tartrate salt. Hence the cake does not taste bitter.
