Cut pieces of beetroot do not leave the colour in cold water but do so in hot water. Explain.

The pieces of beetroot does not become colourless but releases colour in hot water. Because the pigments of beet become soluble in hot water and possess diffusion. Due to hot temperature particles of pigment get help to release from cell membrane.
