Pancreatic secretion contains multiple enzymes for digesting all of the three majuor type s of food, proteins, carbohydrartes and fats. When highly acidic food enters the small intestine, it stimulates secretion of lrge quantities of water solution of sodium bicarbonate by pancreatic ductal epithelium. The presence of proteoses and peptones and long chain fatty acis in the chyme results in secretion of pancreatic difgestive enzymes by the acinar cells and its effect is even more pronunced than that caused by vagal stimulation.
