Baking powder
Baking soda and an edible acid like tartaric acid.
Baking soda `(NaHCO_3)` is used to release `CO_2` gas when heated to make them fluffy.
Tartaric acid is used to avoid the bitter taste by reacting with the `Na_2CO_3` formed.
