Differences between fibrous proteins and globoular protein :

Denaturation of protein : When soluble forms of protien such as globour proteins are subjected to actin of heat , acids alkalies or electrolytes, they undrgo co -agulation to from fibrous proteins insolbe in water , resulting in change of physical and biological properties of protein. These are deantured proteins and process is called denaturation.
