Explain the basic process for production of yoghurt, cheese and cream.

i. The basic process of production of yoghurt, cheese and cream is the same. Generally, for production of the milk pfoducts, bacteria in milk Lactobacilli are used.
ii. For production of yoghurt, cheese and cream, milk is pasteurized at the beginning to destroy unwanted microbes.
iii. Pasteurized milk is then fermented with the help of Lactobacilli.
iv. During fermentation, lactose sugar of the milk is converted into lactic acid and milk proteins are coagulated with the help of lactic acid.
v. Compounds with taste and flovour are also formed during this process. For e.g. Diacetyl has the flavour of butter.
