Explain the steps involved in the process of yoghurt production.

i. Yoghurt is a milk produced with the help of Lactobacilli.
ii. For production of yoghurt, the milk to be fermented is mixed with condensed milk powder. This helps to maintain the protein content.
iii. Milk is then boiled and allowed to cool till it becomes warm . After that, bacterial strains of Streptococcus thermophilus and Lactobacillus delbruekii are added to the milk in `1:1` proporation.
iv. Lactic acid formed due to Streptococcus makes the proteins to gel out (coagulate) and gives dense consistency to yoghurt.
v. Acetaldhyde like compounds formed due to Lactobacilli, give yoghurt a characteristic taste.
