i. Bread are produced form flour of cereals in which baker's yeast (Saccharomyces cerevisiae) is mixed and the dough is prepared.
ii. Yeast carries out fermentation of carbohydrates and converts sugar into carbon dioxide `(CO_(2))` and ethanol.
iii. Due to the production of `CO_(2),` the dough rises up and bread becomes spongy.
