Process of coagulatiion of milk proteins occurs due to lactic acid.
While making yoghurt, cheese and cream, milk is fermented with the help of Lactobacilli. Due to fermentation, lactose sugar of the milk is converted into lactic acid. This, lactic acdi makes the milk proteins coagulate.
