Fatty acids which occur in natural fats are usually monocarboxylic straight-chain compounds with 4-30 carbon atoms. They may be saturated or unsaturated in nature. Saturated fatty acids do not contain double bond in their structure, whereas unsaturated fatty acids contain one or more double bonds, and have lower melting points than the saturated fatty acids.
