Why should the temperature of the reaction mixture of nitric acid not be allowed to rise above `200^@C`?

Above `200^@`C, the nitric acid decomposes into sodium sulphate or potassium sulphate which forms a crust over the mixture thus, restricting the release of nitric acid vapours.
