Justify the use of gelatin as a protective colloid.

Ans: Gelatin ts a lyophilic colloids. Lyophilic colloids have à unique property of protecting lyopliobic colloids. When gelatin is added to a lyoplobic colloids, lyophobic sols acquire greater stability towards coagulation i.e., they get protected and do not get coagulated easily when an electrolyte is added.
