What are restriction enzymes ? Mention their functions in recombinant DNA technology.

The enzymes used for cutting the DNA during recombinant DNA technology are called restriction enzymes.
Restriction enzymes function as chemical knives or molecular scissors in genetic engineering. These recognise specific nucleotide sequence and make cuts. These function as nucleic acid digesting enzymes and break phosphodiester bonds. These are of two types, i.e., exonucleases and endonucleases.
