Why carboxylic acids do not give the characteristic carbonylic reactions of carbonyl group?

The carbonyl group in carboxylic acid is not a free group as in aldehydes and ketones. It is involved in resonance. Therefore, carboxylic acids fail to give te characteristic reactions of the carbonyl groups as are given by aldehdes and ketones.
