What are emulsions ? What are their different types ? Give one example of each type.

Emulsion. It is a colloidal system, consisting of two immiscible liquid phases one of which is a dispersion medium and the other a dispersed phase.
Classification of emulsions. (Oils in water type (o/w).
(i)Oil is the dispersed phase and water is the dispersion medium e.g., milk.
(ii) Water in oil type (w/o). Water is dispersed phase and oil is the dispersion medium e.g., butter.
