What is emulsification ? Explain the role of emulsifier to stabilise the emulsion.

Emulsions are colloids in which both dispersed phase and dispersion medium are liquids. To stabilise an emulsion, the addition of a small quantity of a third substance known as emulsifying agent or emulsifier is essential. Thus, the substance which stabilises an emulsion is called an emulsifier: Soaps and detergents are the most commonly used emulsifiers. They coat the drops of an emulsion and check them from coming together and the emulsion is thus stabilised.
