Sucrose is dextrorotatory but on hydiylysis it gives an equimolar mixture. of D,(+) - glucose a D-{-)- fructose, which is laevorotatory. This type of change in the specific rotation from dexteny rotatory to laevorotatory is called inversion of sugar.
