We know that proteins are very sensitive to heat, acids, change in pH, pressure, salts, etc. When proteins are subjected to any of above changes, the proteins are coagulated or precipitated and Jose their biological activity. Moreover, globular proteins change into fibrous proteins when these are heated or treated with acids. This change is known as denaturation of proteins.
