How can you classify the proteins on the basis of hydrolysis products ?

Text Solution

On the basis of chemical composition proteins can be classified as follows.
(i) Simple proteins : These proteins on hydrolysis give only `alpha`-amino acids. For example, keratin in hair, nails, horns etc, albumin in egg white, glutenin in wheat.
(ii) Conjugated proteins: These proteins on hydrolysis give a non protein portion along with `alpha`-amino acids. This non protein part is called the prosthetic group. The main function of prosthetic group is to control the biological functions of the protein.
(iii) Derived proteins : These are degradation products of simple or conjugated proteins. When simple or conjugated proteins are partially hydrolysed with acid, alkalis or enzymes, proteoses, peptones and polypeptides are obtained in a stepwise manner. These are collectively known as derived proteins.
