What do you mean by inversion of cane sugar ?

Sucrose is a disaccharides which on hydrolysis gives an equimolar monomer of D-(+) - glucose and D-(-) - fructose.
Sucrose in dextrotatory while the mixture obtained on hydrolysis is laevorotatory this is called inversion of cane sugar. The mixture so obtained is called invert sugar.
