The king of spices is black pepper and the queen of spices is cardamom.
(i) Black pepper - Piper nigrum
The black pepper is otherwise called as black gold of India and top producers in India are Kerala, Karnataka and Tamil Nadu. It is indigenous to Western Ghats of India.
The alkaloid piperine, the chemical constituent of black peppers provides the characteristic pungency of the pepper. Black and white pepper are the two types of pepper available in the market.
It is used favouring agents in the preparation of sauces, soups, curry powder and pickles. It is used in medicine as an aromatic stimulant, enhancing salivary and gastric secretions. It also enhances the bio-absorption of medicines.
(ii) Cardamom: Elettaria cardamomum.
It is a native of southern India and Sri Lanka in India, it is cultivated in Western Ghats and North Eastern India as one of the main cash crops.
The seeds have a pleasing aroma and slightly pungent taste. It is used as a flavouring agent in confectionaries, backery products and behaverages. The seeds are used in the preparation of curry powder, pickles and cakes. It is also used as a stimulant and carminative in medicine. It is used as a mouth freshner.
