Yeast is unicellular eukaryote which carries out ethanol fermentation. In the first phase, glucose is converted into pyruvate (glycolysis) in the cytoplasm of the cell. Due to limited oxygen availability, pyruvate remains in cytoplasm where pyruvate decarboxylase and alcohol dehydrogenase enzymes carry out the second phase of anaerobic respiration and produce ethanol and carbon dioxide.
