Why do raw green mangoes turn to yellow colour on ripening?

Green colour of mangoes is due to chloroplasts present in them. Chloroplasts have the ability to get converted into chromoplasts. When chloroplasts are converted into chromoplasts, containing pigments such as xanthophyll and carotene, the mangoes turn yellow. This reaction occurs at the time of ripening. Therefore, raw green mangoes turn yellow on ripening.
