Bone tissue contains both organic material and inorganic material.
The organic material comprises fibres made of collagen protein and the inorganic material contains salts of calcium and magnesium (mainly phosphates)
The collagen present in the bone gets denatured on prolonged or strong heating.
The inorganic material is left behind mostly in the form of ash.
