The raw green leaves contain cellulose. Cellulose is a polysaccharide which contains beta glucose units. In the human digestive system, the enzymes which can break the bonds between beta glucose units are absent. Humans can digest only starch which contains alpha glucose units. Herbivores possess the enzymes and bacteria which can digest cellulose in their large intestine.
