The cell walls of fruits and vegetables are semi-permeable. The liquid inside the cells in the dried fruits and vegetables is more concentrated. When these dried fruits and vegetables due to osmosis and they swell and return to their original form. Since the increase in temperature increases the osmotic pressure `(phi = T)` , the process gets accelerated.
