(1) In glucose five C-C bonds need to be cleaved by `HIO_(4)`. Therefore five moles of `HIO_(4)` is consumed.

Net result is that carbon chain is increased by one. The presence of stereocentre in sugars causes their C=O groups to have diastereopic faces that reacts at different rates, giving different amounts of diastereocomers.
