Why can't we see mitochondria and other cytoplasmic organelles in the cells of the mount ?

It is because we observe it under a light microscope with low magnification and low resolution . The higher magnification of an electron microscope and proper staining are required to observe mitochondria and other cytoplasmic organelles in the cell.
